The Chefs Unlimited 2025 seminar was held over two days in São Paulo, at the Le Cordon Bleu institute.

Newrest’s culinary event brought together chefs from around the world for the second time in its history.

The goal was to strengthen the internal Chefs Unlimited community, explore new culinary techniques, enhance the use of digital tools, draw inspiration from global food consumption trends, and take on a culinary competition: the CHEFS UNLIMITED CHALLENGE.

 

Le Cordon Bleu, a culinary institution

The 2025 seminar took place at the Le Cordon Bleu institute in São Paulo.

Founded in 1895, Le Cordon Bleu has established itself as a leading international network in the fields of culinary arts and hospitality. Its model is based on a commitment to excellence, grounded in rigorous practice and continuous improvement — an approach aligned with Newrest’s operational standards.

 

Culinary creativity, best practices, and food safety: program highlights

Newrest chefs participated in several workshops, including one on artificial intelligence and its growing impact on the food industry. These sessions highlighted the opportunities AI offers for optimizing menu creation. Building on these discussions, the chefs tested their creativity by attempting to surpass AI’s capabilities in designing innovative menus.

A Brazilian cooking demonstration showcased local expertise and enriched technical exchanges among chefs.

The seminar was also an opportunity to reinforce the fundamentals of quality, health, and safety (QHSE) in culinary environments.

 

The culinary challenge: CHEFS UNLIMITED CHALLENGE

The highlight of the seminar was the Chefs Unlimited Challenge. Chefs, paired in teams where members did not share the same language, had to create a dish using mystery ingredients.

The jury, composed of executive chefs and clients, evaluated the creations based on technical skill, originality, and coherence.

The winning team consisted of Alex Cossette (Canadian, representing France) and Alexis Gomez (Chile). Their performance was praised for its precision and creativity.

 

 

The goal now is to keep the Chefs Unlimited community alive beyond the seminar. Strong professional ties were formed, laying the foundation for ongoing collaboration among chefs in the network.
