Witnessing the backbone of global gastronomy: fruits, vegetables, premium meats, seafood, dairy products, and international specialties sourced from across the world, was beyond scale. A masterclass in logistics, sourcing strategy, and quality control — pillars that directly impact the consistency and reliability of Newrest’s operations worldwide.

Chef’s Unlimited not only honors tradition but actively shapes the future of gastronomy.

The seminar explored Artificial Intelligence for process optimization and cost control, alongside advanced sous vide techniques to ensure precision and quality. Sustainability was also a key focus, with discussions on responsible sourcing and the environmental impact of food choices, reinforcing that in today’s industry, sustainability is a professional responsibility.

Through practical workshops and live demonstrations, chefs explored traditional bread-making and high-end pastry techniques.

From the refined layers of the iconic Opéra cake to the technical mastery behind macarons, the sessions emphasized precision, discipline, and respect for tradition.

Chef Nitcheu presented a refined Citrus-Infused Lentil Salad with Seared Quail Fillet and a Delicately Steamed Fish Fillet with Yellow Beetroot Mousse and Seasonal Glazed Vegetables, highlighting precision and balance.
