Newrest Restauration Française: innovation and development

Represented by Mrs. Vaïtiti MOEAU, kitchen clerk, Newrest Restauration Française, participated on June 21st at the culinary experimentation workshop organized by NEOFOOD & CAP AGRO around local fish at the Nouméa Adult Vocational Training School.
Objective: to develop an innovative recipe in an attractive format to encourage children to consume fish.
The yellow tuna presented under several recipes – in sausage, cake, dumpling or in accras – attracted the guests of the Department of Rural Development, the Directorate of Economy, Training and Employment, the Agency Health and Social Services of New Caledonia, Adecal Technopole Agrifood and Mr. Billy WAPOTRO Melanesian teacher and anthropologist involved in the reflection of the future of food in New Caledonia.
