Inauguration of the Digital Factory in Madrid

On May 28, 2025, Newrest inaugurated its new Digital Factory in Madrid. This new 14,000 m² production unit is designed to meet the growing demands of international inflight catering. The site handles 130 flights daily for 42 client airlines, with a production capacity of 25,000 meals and 1,500 trolleys, mobilizing 600 employees.

 

An inauguration under the banner of innovation in Madrid

Newrest teams, including CEO Olivier Sadran, welcomed guests at the inauguration of the Madrid Digital Factory. Among the attendees were Mayor Francisco Javier Corpa Rubio and representatives from major airlines such as Emirates Airlines, Delta Airlines, IAG Group, and United Airlines.

Upon arrival, guests were equipped with the required personal protective equipment for a site tour. Structured in 18 stages, the tour presented the foundations of the Digital Factory over the course of nearly an hour.

The visit continued in the presentation room at the heart of the unit, offering a direct view of the robots in operation. A celebratory cocktail followed in a friendly atmosphere, encouraging discussions about the impressions left by the Digital Factory and strengthening connections among participants.

 

A key milestone in Newrest’s strategy

In 2024, the Paris-Orly site was automated for Transavia, marking the first concrete step into the Digital Factory era. In early 2025, a new Digital Factory dedicated to rail services was launched in Sucy-en-Brie.

The Madrid Digital Factory, inaugurated the same year, represents another key milestone in this momentum. These developments reinforce the group’s ambition: to reinvent onboard catering through an agile, intelligent, and customer-oriented industrial model.

 

Digital Factory: the new generation of units

This new generation of units is based on full automation, advanced robotics, and data exploitation via the ERP Winrest.
Robots receive production orders directly, ensuring smooth and secure operations. Preparation, Pick & Pack, and sales reconciliation processes are driven by AI tools for optimal efficiency.

The Digital Factory’s technology relies on synergy between digital tools and human expertise. By delegating repetitive tasks to machines, teams can focus on higher-value missions, improving performance, quality, and operational agility.

 

Newrest plans to open two Digital Factories per year and to offer this increasingly modern model to its clients.
